Case Study Three: Kondov's Dairy Farm

Kondov's Dairy Farm[1] is situated in the picturesque mountainous region of Troyan, the Balkan Mountain. Established in 1991, the company is oriented in the production and sales of high-quality dairy products. The company combines advanced technology and centuries-old traditional recipes in the production of traditional Bulgarian dairy products, such as Bulgarian sheep brine cheese, goat brine cheese, yellow cheese made of sheep milk “Balkan" and goat cheese under Dutch technology. In order to ensure product quality, all the production processes are under strict daily control, observing the highest standards as ISO 22000:2005 and BRC Global Standard for Food Safety Issue 5-Grade A.

Kondov's farm strives to produce health-driven foods responding to the current customer demand, while conserving natural resources and minimizing environmental impacts with innovative practices, best revealed through organic dairy production. Since 2006, the company had gained EU-organic certificate, and since 2009, USDA- organic certificate. Most of the produce (90%) is for export, mainly to the European and US markets. Considering that the share of the Bulgarian market for organic cheese is constantly increasing, the main focus in the product range is on organic milk products, including organic goat and sheep milk, and milk products—organic goat and sheep cheese Gauda style, organic yellow cheese, specifically.
